Greek style potatoes

Cheaters version.  I cut potato wedges (russet), sprayed them with oil.  I sprinkled the wedges with lemon & pepper seasoning and greek herbs.  After baking at 400 for 20 minutes, I sprinkled them with fresh lemon juice and served.

Variety of marinated boneless chicken from Fraser Valley meats

I did not want the flavours to mix. I folded extra long aluminum foil to create a divider.  NEVER over bake chicken. 350 for 20 minutes should be enough.   Flavours were Mango Chili, Teriyaki, Herb, and Mediterranean.

Cucumber dill salad (for one) Many recipes on line, Google - Crisp Marinated Cucumbers.

I peeled 1/2  english cucumber, then used the vegetable peeler to cut paper thin slices.  I added 15 mL of sugar, 15 mL of rice vinegar and 5 mL of dried dill.  Stir 

I left the mixture at room temperature for 30 mins then ate it!!  A fresh cucumber salad.

Sweet and Sour Pork (I used Chicken) all recipes.com

I used cubed chicken thighs instead of pork. I DID NOT DIP THE PIECES IN EGG FIRST,  I dipped the chicken directly into cornstarch. I find the egg, then flour can get too sticky.

Fry in small amounts until crisp and brown



Stir fried vegetable in with the pork.  Add all of the sauce ingredients in a measuring cup.  Remember to have the cornstarch and water mixed to a smooth paste in the custard cup

Boil the sauce until it is thick. Serve on rice.
