sweet chili chicken...I like the version at Joey restaurant

no recipe, just pan fry chicken, toss with sweet chili sauce (we canned our own).  Cut up chunks of cucumber,  long diagonal strips of green onion, and serve with deep fried wonton strips (students ate it over rice to make a meal, not an appy)
