Porcupine meat balls.....allrecipes.com with a modification

I mixed and cooked the recipe in the same saucepan (less cross contamination) Garlic, onion and beef powder.

I used converted rice.  I did not add water the recipe called for.

all mixed together.....my scoop was too large so I divided them in 1/2 before rolling.



I like to brown them before adding tomato soup.

Lid on, simmer about 20 minutes.

seems very runny but I serve mine with the lots of sauce (and ketchup).  Serve with salad.
If baking in the oven, place the tomato soup on top of the meat by dotting it on.

Smooth the sauce all over the meat (I use a spatula)

Bake at 325 for 35 minutes.

Rice: converted or long grain?

Long grain, white, polished rice

Long grain, white, converted - higher level of B vitamins and a golden colour.  Stays much firmer than white.

Banana bread muffins - 3 different varieties

Same muffin method - use your favourite banana bread recipe.

Watkins makes a very natural tasting extract.

Use your favourites; coconut, chocolate chip and banana (3 different muffin types).
   MASHED BANANA I use frozen ones.  I put peeled bananas into plastic freezer  bags, defrost for 30 sec or until flexible enough to mash

Take a portion of batter/dough out and add toasted coconut

Sprinkle  more coconut on top.  I use a 6 portion, extra deep muffin tin.

This one is called ponderosa: put small amount of batter in the cup, sprinkle with chocolate chips, cinnamon and sugar, add more batter on top.

Peanut butter filling!  I put chocolate chips into the batter, put 1/2 amount into the cup, indent and fill with peanut butter. Add batter on top.

I like to add turbinado sugaronto the top of the muffins for extra crunch!

I labelled the top of my baking soda and powder

I put the wrong leavener in my scones once!

Dried rosemary - too much in the garden

A friend gave me lots of this herb.  I pulled the leaves off, put them on a pan.  I turned the oven to 350 when it reached the heat I turned off the oven and let the rosemary dry in the oven 4 hours.  When completely dried I put in glass containers and plastic bags.

I make the crumb topping before the muffin batter.

All dry ingredients together - lumpy baking powder so I sifted it in.  NO need to sift flour; it says on the bag - pre-sifted.  Just level into dry measure.  Robin Hood has excellent quick videos on baking method, equipment etc.



Liquid ingredients all in one.  Liquid oil is considered a healthier choice over solid.

Have your oven is preheated and your pans are ready, once liquid is added you want to get baking  into the oven.

I use frozen berries, leave then frozen until use and barely stir them in (as with any muffin recipe)

It looks more like a dough than a batter.
I have a 6 portion  oversize muffin tin

I also own a muffin top pan - shallow and allows for more 'top'

I make crumb topping first so I am ready to go when the dough is ready.

Allow to cool slightly in pan - leave then in too long and they will sweat!

run a spatula around the edges (I use my off set spatula from cake decorating)

OOPS.... this has not happened to me in years!  Common in a foods room though.  Use tons of salt to capture all of the egg

The salt helps the egg pull/stay together and makes clean up much easier. ALSO, if anyone where to walk in it they would not slip.
