Prosciutto asparagus

googled how to use this as an appy

one idea was to spray asparagus with olive oil, wrap prosciutto around the spear then broil in the oven until crisp.  The salty meat and the roasted veg make an excellent appetizer!

Roast peanuts (unsalted) in a pan on med for 2 minutes, shake and turn off heat.  When cool chop.

All ingredients in bowl 

I like my scraper attachment (sold separately).
roll in chopped, toasted peanuts.

Stagger your cookies on the sheet; it allows for air circulation.

I always bake on test cookie, if it doesn't work you can repair the dough and not ruin an entire tray.

apple pie filling - Ms Wakely

4 apples, 200mL sugar, *50 mL sugar + 30 mL minute tapioca + 5 mL cinnamon (the last 3 must be mixed together to avoid lumping)*

Apple corer/slicer from pampered chef,  cut out any seeds and trim off the skin.

Layer apples with the 200mL sugar as you slice them into the large measuring cup or casserole dish to avoid browning.

50 mL sugar + 30 mL tapioca + 5 mL cinnamon (I added 15mL pumpkin spice, tasted wonderful but made the apples TOO dark).

Microwave on high for 2 minutes, stir and repeat for another 2 minutes.  The sugar pulls the juice out of the apples.

I had to transfer to my huge measuring cup to stir properly. Stir in sugar mixture.

Boil again for 2 minutes, stir and boil another 2, stir.

Cool in a shallow dish.

Canadian living pastry recipe, again.  Pay attention to crimping the crust, the filling will hide the bottom.

Dock the pastry bottom to keep pastry flat.  I did not use pie weights to cook blind.  I am careful never to stretch the pastry.  I chill the dough, roll it on parchment, use the parchment to transfer it into the plate.

Darker than I wanted, but I used it anyway (did not taste burnt), the filling hid the bottom and the crimped edge look fine.

buying green beans - I only buy what I can use immediately

I do not want and entire bag of beans; take them out of the plastic bag made up by the store and buy less.  Do not do this if it is sealed by a produce packing house!

Peel and slic the yam.  Be careful, cut a flat edge so it does not roll.

I use the spray on the pan and again on the yams.

I use pumpkin spice mixed with a little white sugar to sprinkle on top.  Bake at 325 for 25 minutes.

Pastry recipe from Canadian  Living double-crust Sour Cream Pastry, pie filling from Eagle Brand condensed milk.  It is cheaper to buy a pie....the $2.99 Safeway pie tasted really good!

Peel potatoes, I allow 2 per person

cover potatoes with cold water (they grow below ground) , cover with a lid and check with a fork.  Fork tender they are ready to strain and mash.  I add butter and milk.  Some add sour cream, cream cheese, chicken stock - go with  your favourite.  Salt and pepper while mashing.

Lumpy gravy - fix it!

ugh, bad day for cooking! Push lumps through a strainer OR use your hand wand/immersion
 blender.  Great for repairing all lumpy sauces.....


You burned food? - fix it!

Wash the brussel sprouts

Trim ends off and outside leaves; I cut mine in 1/2 and boil, then add butter, salt, pepper and bacon!

Barely cover in water and boil until bright green (covering them makes them dark green). Watch carefully to avoid burning!

IF your burn them, tear off black leaves.  Do not serve the cut side if it is black, or cut the black off. .  Put cleaned sprouts in a clean fry pan to add butter etc.  Mine were barely black so I could save them
