 we made dough a day ahead - left it in fridge overnight


we proofed at 175 for 10 minutes, then 450 until done (did not remove from oven for preheat)

Oatmeal chocolate chip cookie - R Fraser

You could add 25mL cocoa for a double chocolate cookie or add  to 1/2 dough....you could leave out chips in 1/2 the recipe for 3 types of cookie in one batch!

flat cookie sheet; no edges.  Even cooking.

 stagger the cookie placement for better air flow



 cool, on parchment 10 minutes before moving.  Shortening and sugar needs to solidify.

Ravioli ( THESA resource book)






pasta maker #1 - #5 for thickness.  We left the dough in the fridge overnight.
Lightly flour the counter to prevent  the dough from sticking.
