Cream Puff - Recipe West Van Secondary


I start with water boiled in a kettle, then boil with margarine
make sure the flour mixture forms a ball before adding 1 egg at a time
eggs brought to room temperature in a bowl of lukewarm water


drop by spoonfulls

saw apart with a bread knife
whipping cream (I use icing sugar)
go for darker colour to avoid collapse

you can use a piping bag - no need to cut off the top
