Use a large size grater to 'cut in butter' Thank you Alton Brown!

Making pumpkin scones.  You can grate hard butter, straight from the fridge instead of cutting in with a pastry blender!

Turkey breast - butterflied

Cut turkey breast in half (butterfly) . They cook quickly and do not dry out. I sprinkled rosemary and garlic seasoning on them



Add broccoli to boiling water LID OFF  When the colour is bright green take off heat, strain, season and serve.

Chicken with fig, cheese, apple - main course ( August post - in a chibatta bun)

Skinless, boneless chicken breast, not butterflied.

Herbs:5 mL each - thyme, oregano, basil and rosemary.  Crush the herbs with the back of the spoon to release flavour.

Mayonnaise with minced garlic, slices of asiago cheese and flattened figs. I could not find fig jam.

Apples slice sprinkled with cinnamon sugar and baked at 350 for 10 mins.

Pan fried chicken, topped with garlic mayonnaise,  fig, cheese, apple and shreds of spinach.

Butter chicken - use a jar of sauce and a slow cooker.

Slice chicken and add sauce, stir well.  It will be done in 2 hours on high or 4 hours on low.  I used sauce from Costco.

Add twice the amount of water for rice (eg 250mL rice + 500 mL water) read the rice package first, some vary. Bring rice to the boil, then simmer, lid on, until water disappears and holes appear.

Prosciutto wrapped chicken inspired by Wild Wood Bistro in Crystal lodge Whistler

Butterfly the chicken breasts.

I filled the chicken with pesto and asiago cheese before wrapping in prosciutto.

Wrapped chicken - I used 2 pieces of prosciutto to completely cover.
I baked for 35 minutes in a 350 oven.  You could broil for 2 minutes to crisp the top.  I served with roasted grape tomatoes.

Red potato mash

Boil small pieces of red skinned potatoes in water and garlic cloves, add dry chicken stock for flavour (5mL per 250 mL water.  Drain potatoes, reserving liquid.  Mash potato and garlic adding the reserved liquid when needed.  Serve with butter and pepper.

Last chives from the garden

you can wash, then wrap them in paper towel up to 2 weeks.  Use them chopped for baked potatoes or as a garnish on meat or chicken dishes.

No difficulty finding the cut of meat suggested. Cut across the grain for tender results.

Dredge or coat the meat slices with cornstarch.

Add coated beef to sauce, then stir to cover.

Suggested cooking time is 3 hours on high; mine was perfect.
