Chicken with fig, cheese, apple - main course ( August post - in a chibatta bun)
Skinless, boneless chicken breast, not butterflied. |
Herbs:5 mL each - thyme, oregano, basil and rosemary. Crush the herbs with the back of the spoon to release flavour. |
Mayonnaise with minced garlic, slices of asiago cheese and flattened figs. I could not find fig jam. |
Apples slice sprinkled with cinnamon sugar and baked at 350 for 10 mins. |
Pan fried chicken, topped with garlic mayonnaise, fig, cheese, apple and shreds of spinach. |

Butter chicken - use a jar of sauce and a slow cooker.
Slice chicken and add sauce, stir well. It will be done in 2 hours on high or 4 hours on low. I used sauce from Costco. |
Add twice the amount of water for rice (eg 250mL rice + 500 mL water) read the rice package first, some vary. | Bring rice to the boil, then simmer, lid on, until water disappears and holes appear. |

I filled the chicken with pesto and asiago cheese before wrapping in prosciutto. |
Wrapped chicken - I used 2 pieces of prosciutto to completely cover. |
I baked for 35 minutes in a 350 oven. You could broil for 2 minutes to crisp the top. I served with roasted grape tomatoes. |
