Pork Loin - stuffed and bacon wrapped


I quartered little potatoes, sprayed the, with oil then tossed with garlic seasoning mix 
I wanted an a pork loin roast but the tenderloin was the cheaper this week.


any bacon will work

Roasted the red peppers under the broiler, Peeled them, then sliced.


Using a boning knife I sliced the loin in a circle shape. They suggest flattening it.  Last time I used parchment and my frying pan.....broke the handle off....

Season the pork. Add your filling.  Apples work well.  I used apricots and the roasted peppers

roll the pork up and stretch the bacon around the meat. Add seasoned potatoes and bake at 400 for 25 minutes

Let the pork rest 5 minutes for easier slicing

It is okay if the meat is a little pink.  That goes away as the meat rests.

Served with the roasted potatoes and broccoli cauliflower vegetables (I mix a frozen green giant pouch with raw broccoli )

orange versus yellow egg yolk

The orange yolk indicates a natural diet of greens, bugs etc. BOTH eggs are lucerne (safeway eggs), not organic or free range.  The orange yolk is ex large size, yellow is large size.  Recipes use large eggs. Results vary if you use medium or ex large.

I use these ingredients in my chili.  Lots of tasting along the way.  I love the frozen bean combo.

I like chili with a large amount of lean ground beef.  Cook thru; no pink! 

have no fat to remove.  

I added tomatoes, beans and spices. Didn't like the taste

I added these baked beans; they added the flavour I wanted. Using frozen beans made the chili too dry. 

I serve cornmeal muffins with chili.

I slide a piece of white paper between the cornmeal and the recipe so I can read it.

Baking is chemistry; measure and follow the recipe!! Do not start adding more flour because the batter looks runny. Eggs thicken the mixture as it bakes.  Get all of your ingredients together and preheat the oven before mixing begins

I use an oversize muffin tin for adults; mini loaves if I want them to cook quicker.

I use a ladle or small, dry measuring cup to pour batter.

The skewer should come out clean after the suggested baking time.

The muffin at the back is smooth from over mixing.  A volcano top shows the muffin  was put in before the oven was at the right temperature.

beef bowl - using roast beef leftovers

prepare your favourite rice using package instructions - cook while preparing the vegetables and beef

Use up any vegetables you have in the fridge. I used a vegetable peeler on the carrot.  
Left over beef roast (sliced in a meat slicer).  I cut the slices into strips.

Cover the fry pan with water and bring it to a boil.  Add the vegetables that cook longest in the pan, add the rest.

I removed the vegetables and added beef and Teriyaki sauce.


Put the rice on the bottom, cover with meat and vegetables.

Quick and easy stir fry over rice.  You can use rice noodles, or a package of instant Chinese noodles

a pre stuffed, cook from frozen butterball turkey

realized TOO late that the total weight included the stuffing....a small bird with tons of stuffing!
Next time I will buy a bird and the butterball frozen stuffing separately.  FOOD  SAFE. Peel plastic from the the bird into the pan.  It is not recommended to rinse the bird and spray salmonella into the sink

I put parchment into the bottom for easier clean up.  Juice from the bird does not burn away.

I have mini-fall cookie cutters. I used an IKEA cake doily to roll the pastry on.
