I slide a piece of white paper between the cornmeal and the recipe so I can read it. |
I use an oversize muffin tin for adults; mini loaves if I want them to cook quicker. |
I use a ladle or small, dry measuring cup to pour batter. |
baking in a counter top convection oven (that needs the foil changed). |
The skewer should come out clean after the suggested baking time. |
The muffin at the back is smooth from over mixing. A volcano top shows the muffin was put in before the oven was at the right temperature. |
