cornmeal muffins

found this in the hot cereal section, not in baking


recipe for hot cereal and cornmeal muffin on the back

I slide a piece of white paper between the cornmeal and the recipe so I can read it.

Baking is chemistry; measure and follow the recipe!! Do not start adding more flour because the batter looks runny. Eggs thicken the mixture as it bakes.  Get all of your ingredients together and preheat the oven before mixing begins

I use an oversize muffin tin for adults; mini loaves if I want them to cook quicker.

I use a ladle or small, dry measuring cup to pour batter.

baking in a counter top convection oven (that needs the foil changed).

The skewer should come out clean after the suggested baking time.

The muffin at the back is smooth from over mixing.  A volcano top shows the muffin  was put in before the oven was at the right temperature.
