Foccacia - Pacific Culinary Institute

 Yeast; it's alive

 add 250 mL flour, then salt and flour until the dough cleans the bowl
looking too sticky
really need (knead) to use more flour......
 cookie sheets; no sides for even cooking
shape into flat circle

 mixture of herbs and coarse salt


 dimple to catch oil and herbs
 cook 12 -15 minutes until they come off the parchment, do not go for golden brown colour
balsamic and olive oil in a ying/yang design
