Stuffed peppers using left over rice and spaghetti sauce (easy to make a vegetarian version)

Canadian Living tip to push the stem of the pepper in and pull out the seeds.

home made spaghetti sauce and left over rice from the freezer.  Heat nad stir together.  Season to taste.

Stuff the pepper and bake for 10 m in at 350 (meat is already cooked). I cut the pepper in 1/2; I can never eat a whole one.

Serve with grated cheese.

Sweet Bake shop icing - "don't be afraid of too much butter" (my daughter-in-law quote)

Absolutely delicious! 

I left the butter out overnight, after I had chopped it into pieces. I did not sift the icing sugar first. Video available on line. I used clear vanilla and lots of it.  No other liquid in this recipe.  I would revert back to Wilton's shortening/butter for cupcakes that will be exposed to summer temperatures.  I had my icing melt in the summer heat, talk about wilting roses....

So simple. Thank you for the loan of a cupcake carrier.... I used Wilton foil lined cupcake liners; unfortunately the foil started to pull away from the cake.  YES, I used a Duncan Hines cake mix; French Vanilla.

Individual apple cakes

I cheated and used a white, Duncan Hines cake mix.  I chopped apples and added a small amount of sugar into which I added 1 mL each of cinnamon, nutmeg and clove. Cake batter, apples and top with more cake batter.

I did not mix the apple into the batter; I did not want to colour the white cake.

They were moist and flavourful!  they should be served with custard sauce.  Cups are from Dollarama.  I cooked them on a rimmed jelly roll pan (my cookie sheets have no sides or rim). The post of blueberry muffins; I put the paper cups inside a muffin tin, which prevented the batter from baking.

To die for blueberry muffins - allrecipes.com

Wanted to try out a new baking up for presentation.  This recipe is a favourite I make all the time - amazing!

Do not bake the cups inside a muffin tin, they should be placed on a baking sheet (I will post the apple cakes I am making for St Patrick's Day next week). These were undercooked in the middle! I put the bottoms back in the oven and re-cooked the tops on a baking sheet......

Sweet and sour pork


I looked up 2 recipes on line (allrecipes.com) and mixed a stir fry and sweet and sour pork recipe to suit my taste.  I did not bread the pork before frying (less calories)

I prepared my veg while the sliced pork chops fried. 

The liquid is from the pineapple juice.  Remember to always mix the thicken (cornstarch or flour), with sugar or a cold liquid before adding to hot food.

I like to smash my garlic with the side of the knife before peeling off the shin and mincing.

Fire roasted tomatoes - available at save on foods

They add flavour - I drained them completely before using.

Very quick meal, using naan bread and pre-grated cheese blend.  I added thin slices of onion & prosciutto

Orange compote ( for my 0% Liberte Greek Yogurt) works with lemons or limes as well.

I zest the orange peel of one orange, I section 2 oranges and put in the saucepan.  I barely cover with water.  Simmer for 20 mins and stir.  Boil for 2 minutes.  Add sugar to taste.

IF the mixture looks too runny for your taste, boil it longer.  Put in clean jars; I make small amounts to eat within the week.
LOW sugar means it can go bad quickly.....

I spoon mine in the middle of and top of my yogurt.

Baby beef liver

the coating is flour mixed with Hy's seasoning salt

Dredge the liver well, ( I rinsed the liver in water first)

I heated olive oil in the pan and fried prosciutto at the same time as the liver.  Do not overcook, cooks quickly.

Serve with prosciutto
