all recipes coconut lime rice

Look for recipe ratings:  4 and above is a good bet.  Too many comments go on and on about changes the individual made.  I stick with the original recipe amounts then write in my own changes for next time.


I use solid coconut oil, butter will burn quickly if not mixed with another oil product.


The coconut flakes I bought from costco are toasted - I did not burn them!

I use dry concentrate to make my own stock.

Lid on (no peaking). It is ready when the liquid is gone and 'birds eyes' show up in the rice.

When served I added more toasted coconut on top.....side dish with citrus chicken
