I use solid coconut oil, butter will burn quickly if not mixed with another oil product. |
The coconut flakes I bought from costco are toasted - I did not burn them! |
I use dry concentrate to make my own stock. |
Lid on (no peaking). It is ready when the liquid is gone and 'birds eyes' show up in the rice. |
When served I added more toasted coconut on top.....side dish with citrus chicken |
