Chicken: butterfly fresh chicken breasts



Fresh chicken breasts were on sale!   Lay the chicken flat and slice in 1/2, not the entire way through.

I will show later on the blog how to make these into chicken cordon blue....for now citrus marinade.

I had extra oranges and limes on hand.  I used the reamer to get the juice out of the lime.  Citrus zest can be produced using a zester (white), a nutmeg grater (baby grater) or your box or flat grater.  Tke off the coloured part avoiding the bitter white.

Throw out OR boil marinade from meat, chicken sea food.....bacteria

Grill chicken just until pink disappears.  It takes minutes to dry out pork and chicken on the grill!

Plated with coconut lime rice and a side salad (fresh orange slices)
