Spinach bacon salad

I microwave the premade bacon for 30 sec and let it cool (I drain excess fat onto paper towel).  The cheese I choose was Dubliner...love the strong flavour.  Parmesan, asiago would work well.

For salad dressing any would do.  A home made oil, vinegar, sugar with a touch of melted bacon fat is traditional.
